What’s small, green and fluffy? Correct! April almonds, or also called green almonds. We have recently discovered the spring specialty at our favorite supermarket. Then bought, tried and directly realized that has nothing to do with the typical almond flavor. Here’s our little report.
The almond, which is often wrongly regarded as a nut, is botanically a drupe. The relationship with apricot and peach is in it’s dried form hard to recognize. Yet, the April Almond looks more similar. The shell of the drupes is green and hard, in the crude state a little furry and herb. Amongst them is the creamy seed, which reminds of the taste of cream. The mild, floral aroma from April almonds thus differs enormously from the nutty flavor of dried almonds.
In the Mediterranean region, they are widely used. In Greece and Turkey, they are treated as vegetables, blanched in salted water, or fried. The bitter substances that are present in raw april- almonds, going largely lost from cooking.
However, in Germany green almonds are known, especially in the Pfalz. The cultivation of almond trees is there favored by the temperate climate. Here, the April almonds are freed of the shell after the harvest, candied and then glazed. The regional specialty is pure enough as candy or as accompaniment to deer. But how do you use the drupes in cocktails.
How to use April almonds
Take 5-washed, green almonds per 100ml spirit, gather the almonds small and let the whole mixture rest, at room temperature for 5 days, in a closed vessel. This method gives the spirit a good cream-like aroma which rounds off the corners of the spirit.
300ml water, 300g sugar and 10 chopped, green almonds are heated together until the sugar has dissolved and now rested at low heat for 10 min. Now the syrup is bottled and stored cool. With the fresh almond syrup, the floral aromas can be excellently conveyed into the drink.
Formula of April almonds:
For our example, we use directly, both self-produced ingredients. The result is a reminiscent of freshly cut grass drink. Try it!

2 cl fresh lemon juice
All ingredients are now cooled by using a shaker filled with ice cubes and then strained into a chilled glass. Cheers!
